Quick Penne with Vegan Cream Sauce:
This cream sauce is amazing. You're gonna love it! Also, if you want to make a quick mac and cheese, just add a little more nutritional yeast and another teaspoon of Earth Balance to the sauce and serve over macaroni.
NOTE: Make sure to use unsweetened almond milk. It's very important when making vegan cheese/cream sauces in order to achieve that cheesy taste without actually using any cheese.
TIP: Add a drop of oil to the pot of water before boiling pasta to prevent it from sticking together.
INGREDIENTS:
For the Sauce:1/2 cup unsweetened almond milk
2 tbsp nutritional yeast
1 tsp sesame tahini
1 tsp olive oil
1 tbsp Earth Balance buttery spread (or other butter substitute)
Black pepper
Crushed Red pepper, optional
You'll Also Need:
2 cups penne, cooked according to package directions
1 cup grape tomatoes, halved
2 medium onions, diced
3 cloves garlic, chopped
1/4 tsp kosher salt
Drop of oil
Serves 2.
Total Cook Time: 20 to 25 minutes.
INSTRUCTIONS:
1. Cook the pasta according to package directions.2. While the pasta is cooking, whisk in the almond milk, nutritional yeast, tahini, olive oil, and Earth Balance buttery spread in a medium sauce pan. Add the crushed red pepper if desired.
3. Heat a medium pan with a drop of oil. Add the grape tomatoes, onions, garlic, and kosher salt. Saute on medium to medium-high heat until the onions are cooked through and translucent, 7 to 8 minutes. Be careful not to burn the garlic!

ReplyDeleteThanks for the question...I realize now that I need to edit this a little to make it more clear. You can just bring the sauce to a boil while whisking frequently, cook it on low heat for 5 minutes, and then mix it in with the pasta once the pasta is ready. Hope this helps!
